Valencian Paella

Paella is a dish prepared for centuries, but with the advances of gastronomy and the passing of time has changed and the amount of ingredients has decreased. The most common paella with seafood, which is a mixture of rice and seafood and paella, which is the best known and has chicken.

Ingredients

  • For the broth:
  • 2 pounds fish bone.
  • 2 pounds chicken bone.
  • 1 head of lobster.
  • 3 stalks of celery.
  • 1 large onion.
  • 1 green pepper.
  • 2 bay leaves.
  • 2 gallons of water.
  • Salt to taste.
  • For the paella:
  • 1/2 chopped onion.
  • 1 green pepper chopped.
  • 3 chopped plum tomatoes.
  • 2 tablespoons finely chopped fresh garlic.
  • 20 shrimp.
  • 8 mussels.
  • 1/2 pound of squid.
  • 3/4 pound of cubed chicken.
  • 4 lobster tails.
  • 4 tablespoons olive oil.
  • 2 teaspoons tomato paste.
  • 1/2 red pepper cut into strips.
  • 2 cups rice 6 cups of broth.
  • A pinch of saffron.
  • 3 ounces of peas.

Preparation

The broth: Boil all ingredients until broth is reduced to 1 gallon or so. Add the salt. 

From paella: Heat the oil and saute the garlic. Add the tomatoes and stir. Add peppers, onion and mix. Put the squid, chicken, tomato paste, rice and stir all ingredients. Put the broth and rice to wiggle it loose, open well and cooks evenly. Put the saffron, mussels, shrimp, lobster tails, peas and red pepper. Reduce heat and cook 10 minutes. Bake at 300 degrees F 15 minutes.Remove from oven and take a pinch of salt. If you want you can garnish with lemons games.
