Basque Chicken

If you are not easy to find the ham, which is the original recipe ingredient, substitute with smoked ham. Accompanying the recipe with Pisto Manchego (look for recipe)

Ingredients
  • 2 lbs. thin chicken breasts, skinned and bone
  • 2 red peppers, thinly sliced
  • 1 white onion, thinly sliced
  • 2 tbsp. olive oil
  • 1 can (14.5 oz.) Crushed tomatoes
  • 1/4 lb. of ham, diced 1/4 inch
  • 1/4 cup black olives, sliced
  • 4 cloves garlic, minced
  • 1 tsp. dried thyme
  • 1 tsp. smoked paprika
  • 1/4 tsp. cayenne pepper
  • 1/2 cup chopped parsley
  • 1 1/2 tbsp. sherry

Cooking time: 10 min
Ready in: 25 min

 Preparation

Season the chicken with salt and pepper. Heat a tablespoon of olive oil in a skillet over medium high heat. Add 4 chicken breasts at a time and cook 2-3 minutes per side until cooked and golden. Put the chicken breasts on a plate and repeat with more oil and remaining chicken breasts.
In the same pan, add the onions, peppers, garlic and thyme. Kitchen 3 minutes to soften vegetables. Season with salt and pepper. Add sherry wine and scrape the bottom of the pan with a wooden spoon. Add the crushed tomatoes, prosciutto, olives, paprika and cayenne. Return the chicken to the pan and cook 2 minutes. Add the parsley and serve.
