- 2 lbs. thin chicken breasts, skinned and bone
- 2 red peppers, thinly sliced

- 1/4 cup black olives, sliced

- 1/2 cup chopped parsley
- 1 1/2 tbsp. sherry

Preparation
Season the chicken with salt and pepper. Heat a tablespoon of olive oil in a skillet over medium high heat. Add 4 chicken breasts at a time and cook 2-3 minutes per side until cooked and golden.
